The name of this marvelous coffee profile is an homage to the Poços de Caldas volcano: St. Domingos, today one of the most geologically rich volcanic calderas in the world.
St. Domingos is a saint with high relevancy in the catholic culture - very embbeded in Brazilian culture and in particular in this region - being responsible for the creation of the order of Dominicans and expanding frontiers by the preaching of the holy rosary.
